Sweet Potato Chicken Chili healthy and delicous

I don’t know about you , but soup is a year long treat in our house…not just Fall and Winter! It doesn’t matter if it’s hot outside, sometimes soup just hits the spot…and it makes great leftovers for lunch! This Sweet Potato Ground Chicken Chili is great for the warm and cold seasons! Spice this up in the summer with fresh garden vegetables and herbs for garnish! I am giving you a recipe, but if its summer and you have fresh vegetables harvesting, throw them in. Fresh herbs on top are ALWAYS a good thing on Chili!
What I used to make this Sweet Potato Chicken Chili
- 2 LBS organic ground chicken
- 3 tablespoons Avocado Cooking Oil for cooking vegetables and chicken in pot
- 1 large sweet potato (or 2-3 small) peeled and diced into cubes the size of your choice
- 27 ounces canned tomato sauce (1 29 oz can plus 1 8 oz can)
- 1 15 oz can of black beans, drained
- 1 10 oz can tomatoes with diced green chilis (use this one!)
- 28 oz can of whole peel tomatoes chopped not drained (I use kitchen scissors to cut in can)
- 1 -2 yellow onion peeled and diced. Reserve some (1/4 cup) for garnish.
- 3 stalks celery chopped
- 4 diced jalapeno (or more to taste) seeds removed and de-veined . 1 to add to chili and reserve 3 chopped for garnish.
- 1 green bell pepper chopped
- 1 tablespoon ground cumin (or more to taste)
- 1/4 cup heaping of chili powder (use this one!!)
- 1 teaspoon black pepper (use this one!!)
- 2 teaspoons sea salt (use this one!!)
- 1-2 cup water depending how thick you want your chili. 1 cup for sure. Add rest as you go until desired consistency is reached.
- 1 tablespoon butter

How to make this Sweet Potato Chicken Chili
- Add 2 tablespoons of avocado oil to a large dutch oven or large cooking pot. Cook the onion, celery, green pepper, and jalapeno until tender, about 10 minutes.
- Add another tablespoon of avocado oil and add 2lbs of ground chicken. Cook the chicken through and continue chop and grind as it cooks. THIS TOOL is essential for creating evenly ground chicken or ground meat of any kind!
- Add the rest of the ingredient EXCEPT FOR THE BUTTER AND SWEET POTATOES. and bring to a boil.
- Lower to a simmer level and cook for 1-2 hours. Keep at a low simmer level and don’t let boil.
- 30 minutes before you are done simmering the chili, add in the sweet potatoes. If you add them in at the beginning, they will turn to mush. This is why it is important to add them 30 minutes before you are finished!
- When the chili is done cooking, add in the butter and stir until fully melted.
- Eat and enjoy!
