SPICY BBQ PINEAPPLE BBQ GRILLED CHICKEN

This Spicy Pineapple BBQ Grilled Chicken was inspired by one of my favorite creators on one of my favorite cooking shows! I will share her version below, as well as my take on it ! Spicy BBQ Pineapple BBQ Grilled Chicken is a great combination of sweet, spicy, and sticky flavors. This chicken is quick and easy to prepare and perfect on the grill. This Spicy BBQ Pineapple Grilled Chicken is quite possibly the easiest of all the easy things to make. The marinade for this meal includes 1 ingredient- and the sauce is made from 3 ingredients!
How did I come up with this recipe for Spicy BBQ Pineapple Grilled Chicken?
The Kitchen on The Food Network television channel is one of my favorite shows. Over the summer, we were inspired by a SPICY PINEAPPLE BBQ GRILLED SALMON recipe that Katie Lee Biegel shared on the show! I took the idea for the sauce and switched up the protein and add a little seasoning! This is a perfect recipe to multiply for a crowd, because the chicken comes out perfect every time!

What will you need to make Spicy BBQ Pineapple Grilled Chicken?
2 medium to large size Chicken Breast
1 can pineapple chunks in juice, 1/4 cup juice reserved
1/2 TBSP of chile-garlic sauce or sriracha sauce
10 oz of store-bought bbq sauce (this one is amazing)
BBQ Seasoning powder (this one is so good!)
Avocado Oil Spray

How to make this Spicy BBQ Pineapple Grilled Chicken
- 4 to 24 hours ahead, marinate the chicken in a zip-lock bag with a can of diced pineapple with juice. Reserve 1/4 cup juice to use later in the sauce. I pour 1/4 cup of juice out of the can into a small mason jar then put in fridge. Dump the rest of the can of pineapple chunks along with juice in a zip-lock. Add the chicken to the zip-lock bag, making sure both chicken breast are marinating in juice. Place in fridge.
- Now it’s time to grill! Make the easy stove-top sauce. Make this about a 1/2 hour before grilling. Combine the BBQ sauce, pineapple juice and chile-garlic sauce or sriracha sauce in a small saucepan. Bring to a low simmer, then reduce the heat to very low. Let cook, stirring often, until thickened, about 20 minutes.
- When the sauce is thickened, reserve half in a bowl that you can baste onto the chicken on the grill (discard the BASTING SAUCE after-as it will have been in contact with undercooked chicken) . Keep the remaining stove-top sauce to use as dipping sauce.
- Remove marinated chicken 1/2 hour prior to grilling from the fridge. Remove chicken from juice and pineapple chunks and pat dry with a paper-towel. Discard zip-lock with juice and diced pineapple.
- Prepare Chicken by pounding both chicken breast until the are equal in size, so that they grill evenly. A good trick for pounding chicken is to put it in a zip-lock gallon bag, spray a little avocado oil spray in the bag and pound the chicken in the bag. Keeps the area sanitized and keeps and raw chicken or raw chicken juice from flying around. The avocado oil keeps the chicken from sticking to the bag.
- Remove Chicken from the bag. Leave oil on the chicken and then coat both sides with the BBQ Seasoning of your choice. The oil will help the seasoning stick to the chicken.
- Pre-heat grill to medium to medium-high heat. Clean and grease your grates.
- Place chicken on the grill and cook 3-4 minutes and then flip. Once you flip, baste on the Spicy Pineapple BBQ Sauce. Continue to cook the chicken until it cooks through to at least 155 degrees. Remove and cover with foil tent for another 5 minutes. Keep in mine the chicken will continue to cook while under the foil tent .
- Temperature Check to make sure your chicken is fully cooked through and then enjoy! Use the rest of the stove-top sauce for dipping !

Some tips for making this Spicy BBQ Pineapple Grilled Chicken!
** Store Chicken in a zip-lock bag with pineapple chunks and juice (with 1/4 cup of pineapple juice reserved in fridge)

**Remember to reserve 1/4 cup of pineapple juice from can to use later in sauce. You can not use the juice from the zip-lock once the raw chicken has marinated in it (food safety purposes).
