Slow Cooker Stuffed Peppers

Slow Cooker Stuffed Peppers in the crockpot

These slow cook stuffed peppers are a weeknight win! You can prep everything on your meal prep day and then easily build it together when it is time to throw it in the slow cooker. Mix the meat ahead of time and form the “meatballs”. Store the meatballs in the fridge in a storage bag or container until the day you are ready to cook (store no more than 3 days). You can also prepare the peppers ahead of time by cutting the tops and taking the seeds out. The rest of the ingredients are pretty much dump and go! Using your meal prep day to prepare as much as possible, makes for easy weeknight meals!

What you will need to make these slow cooker stuffed peppers:

6 bell peppers- tops cut of and seeds taken out

2 pounds lean ground beef (use lean ground beef for crockpot, so sauce doesn’t get fatty)

1 medium size yellow onion

1 cup uncooked white rice

2 cans condensed tomato soup

1 can diced tomatoes

1 cup of water

3/4 TBSP oregano

3/4 TBSP basil

3/4 TBSP garlic powder

How to make these slow cooker stuffed peppers:

1. Prepare the peppers. Wash them, cut off the tops, and scoop out the seeds. Set aside.

2. Make the filling. Combine the ground beef, un-cooked white rice, finely chopped onion (I sauteed first),and all seasonings in a large mixing bowl. Knead until well-mixed.

3. Form meat mixture into one large meatball for each pepper. Drop meatballs into peppers.

4. Pour condensed tomato soup, diced tomatoes and water into slow cooker. Add in stuffed peppers onto sauce. Top each pepper with a dollop of sauce.

5. Place lid on slow cooker. Cook 6-7 hours on low or 3-4 hours on high. Serve with salad or veggies!

**As the peppers cook…the sauce takes on a light pepper flavor along with the flavors of the meat and seasoning. It. Is. Amazing!
