Healthy Secret Ingredient Chicken Soup…Want the secret?

Healthy Secret Ingredient Chicken Soup is a great soup to make during the fall and winter months when all the sickness starts spiking up! We are in the heart of sick season, and working at a school means I need all the extra immunity I can get! This soup is great for a family dinner and also works great for meal prep. I make a pot of this on Sunday and we have it around for lunches during the week!

What is the secret ingredient? I won’t keep you waiting!! It’s Cauliflower! I blend up a little bit of steamed cauliflower with almond milk and add it to the chicken broth after the soup is cooked. This gives the broth just a little bit more thickness. I would by no means call this soup creamy, just a little bit more of a ‘rustic’ feel to it! If you want to make it extra creamy you can double the cauliflower and almond milk blend and add it in to the consistency that you like!

What will you need to make this Soup?

1 LB Chicken Breasts (we get ours from Crowd Cow)

12 oz Cauliflower

1/4 CUP Unsweetened Almond Milk

1 cup chopped carrots

1 cup chopped celery

1 cup chopped onions

4 cups Chicken Broth low sodium

1 tsp Thyme

1/2 tsp Garlic Powder

1/4 TSP Celtic Sea Salt OR to taste

1/4 tsp Mesh Pepper or Fresh Ground Pepper

2 TBSP Avocado Oil

Stove Top Instructions for Healthy Secret Ingredient Chicken Soup

Making this Chicken Soup on the stovetop is actually very easy. I recommend prepping and chopping all the ingredients before you start. Cooking the shredded chicken ahead of time is helpful too. If you don’t want to cook the chicken, you could use rotisserie chicken. I like to have all of my ingredients chopped, portioned and the prep work cleaned up before I start the soup. I line up everything I need to cook for the soup on a tray! That’s just me though! Some people say ‘ Bless This Mess!’ and some say ‘ Clean As You Go!’… I am a ‘Clean As You Go’ girl myself! But, you do you!

I am going to give you my method for cooking shredded chicken. I use the Instant Pot method! Click here for my super easy and flavorful recipe for Instant Pot Chicken! If you are super short on time you could also buy pre-cooked chicken breast from the grocery store in the ready made food section!

Directions for Cooking the Soup!

  1. When you’re ready to make your soup, start by steaming the cauliflower in a pot with boiling water then draining and setting the cauliflower aside along with the 1/4 cup of measured almond milk.
  2. Next add the avocado oil, carrots, celery and onion to a large pot or dutch oven and cook over medium heat. Once the veggies have softened (about 6-8 minutes) add the thyme, garlic powder, salt and pepper, cover and bring to a boil and then turn down to a simmer. Simmer for 15 minutes.
  3. While the soup is simmering, blend the steamed cauliflower with milk until smooth. I used my VITAMIX BLENDER Add the shredded chicken and cauliflower puree to the pot. Stir to combine and serve.

  • 1/4 tsp mesh pepper or fresh ground pepper or to taste
  • 2 tbsp avocado oil

Notes for this Soup !

  • Additional Veggies – Additional Veggies can be added to this soup or veggies can be swapped out, however I highly recommend keeping the base of onion, celery, carrots. Spinach, Kale, Peas and/or Corn would be great additions to this soup.
  • Protein Swap – If you don’t want to use cooked chicken, you could sub cooked ground chicken or cooked ground turkey. You could also sub turkey breast for the cooked chicken.
  • Milk Options– If you don’t want to use almond milk, dairy milk or any other non-dairy milk can be substituted including coconut milk.
