Healthy Rustic Lemon Chicken Soup

This Healthy Rustic Lemon Chicken Soup is one of my favorite soups to make to have around during cold and flu season. This soup is made with organic vegetables and organic chicken, it is super filling and filled with a very light lemony flavor. This soup uses bone broth instead of regular chicken broth. The benefits of bone broth are amazing…it is like liquid gold for your body! You can serve this soup with rice, quinoa, noodles or crackers! This soup is also delicious on it’s own. Another delicious way of eating this soup is with Sourdough bread….it really hits the spot! This soup is made without cream or dairy!
What makes this Soup So Healthy?
Every part of this soup has a different health benefit! Bone Broth is one of them. Think of bone broth as a SUPERFOOD! Bone broth is not the same as regular broth or regular stock. Regular broth or stock are simmered for a shorter period of time than bone broth. The reduced cooking process reduces the amount of beneficial gelatin extracted from the bones. Regular broths and stocks are limited in their ability to support the immune and digestive systems. There are so many benefits to bone broth! I will go over just a few with you!
- Digestive Health: It has a long history of being used as a digestive Tonic. The reason bone broth supports the gut goes back to collagen, which forms gelatin when it’s cooked down even further. Collagen and gelatin contain amino acids such as glutamine that supports a healthy inflammatory response. Bone broth is easily digested and soothing to the digestive system, unlike many other foods that can be difficult to fully break down. By regularly drinking bone broth or using it in recipes, you can help promote healthy gut integrity while reducing inflammation.
- Immunity Booster: In foods and our bodies, amino acids are the building blocks of proteins. Proteins play a crucial role in many of our bodily functions and assist in maintaining our health. Now, some amino acids are essential, meaning our bodies can’t make them so we have to get them from food. Others are non-essential, because our bodies can produce them. When the body is sick or stressed, it doesn’t produce those non-essential amino acids as well. And that’s when we need those amino acids the most for healing. But, bone broth can help compensate for the lack of these non-essential amino acids. The amino acids and anti-inflammatory bone broth benefits make it a powerful immune-system booster.

What you need to make this Healthy Rustic Lemon Chicken Soup
- 1.5 lbs of cooked chicken breast (I get mine from Porter Road Delivery Box!)
- 6 cups of Chicken Bone Broth (This is the only brand of bone broth I use)
- 1.5 cups of chopped organic carrots
- 1.5 cups of chopped organic onion
- 1.4 cups of chopped organic celery
- 5 large cloves chopped organic garlic – peeled and minced
- 1 tsp of Ghee (This is the one I use)
- 1/4 tsp sea salt (or more to taste)
- 1/4 tsp mesh pepper (or more to taste)
- 3 organic eggs
- Juice of one organic lemon (or more to taste)
- 2 Bay Leaves


How to make this Healthy Rustic Lemon Chicken Soup
- Prepare and organize all ingredients.
- Place the ghee in a large pot or Dutch Oven with the onions, celery and carrots. Bring to a medium heat and cook 5-6 minutes or until the vegetables have softened.
- While the veggies cook, shred the cooked chicken breasts that you have set aside. I have a super easy and flavorful recipe for Instant Pot Shredded Chicken. It is so simple and the chicken always turns out tender and delicious. It is a perfect recipe for chicken to use in soups. CLICK HERE for the recipe.
- Once the veggies are soft, after about 5-6 minutes and the minced garlic. Cook for 2-3 more minutes or until fragrant.
- Add the 6 cups of Bone Broth, shredded chicken and salt and pepper and 2 bay leaves. Simmer for 20 minutes.
- In a separate medium sized bowl, whisk together the eggs, and lemon juice until the mixture is foamy with no streaks remaining.
- Temper the eggs: Pour 2 ladles of broth from the pot into a cup. Then grab a whisk and slowly add this broth to the bowl of the lemony egg mixture… a couple table spoons at a time while whisking constantly. Do not pour too much hot broth in the lemon egg mixture too quickly or you will end up with scrambled eggs. Increase to a steady stream once you are half way through while continuing to whisk. The slower the better. Once you’ve incorporated it all, slowly drizzle the mixture back into the pot of soup while whisking. The key to tempering eggs is the slower the better!!!
- Thicken Soup: Return the pow to low hit and cook for a few more minutes to allow the soup to thicken up. Do not let it come up to more than a simmer. Add more salt, pepper, or lemon juice to taste.
- Remove bay leaves and serve !
