What I used to make this Easy Healthy Pickle Chicken Salad recipe !
- 2 cups rotisserie chicken breast or other shredded or chopped chicken breast. (I used 2 chicken breast I air-fried at 165 degrees for 12 minutes…cooked to 155 degrees. seasoned with salt, pepper, garlic powder)
- 2/3 cups chopped celery
- 1 1/2 cup bread and butter pickles chopped
- 3/4 cup sweet onion chopped
- 1/4 cup sweet relish
- 1 tsp dried dill seasoning
- 5 TBSP avocado oil mayo
- 1.5 TBSP red wine vinegar
- 1 Tbsp mustard
- Salt and pepper to taste

- Combine: chicken, celery, onion, chopped bread and butter pickles in a medium size mixing bowl.
- In a smaller bowl combine mayo, mustard, red vinegar, dill seasoning, sweet relish and salt and pepper to taste.
- Mix dressing with the chicken salad mix.
- Eat on crackers, bagels, bread, croissants, cauliflower sandwich thins, or lettuce cups to keep it low carb!
