Healthy Items To Pack in your Lunch

If you aren’t packing your lunch for work, then you are missing out!! Don’t spend your money on a take-out lunch every day. There are so many delicious and healthy options that are available to you that will fuel your brain and body with all the right stuff. Without a balanced mid-day meal, your energy and concentration will drop along with your productivity! So set yourself up for success and keep everything you need on-hand to pack the perfect lunch! Having healthy items to pack in your lunch around the house is key to staying on track!
Will it be a lot of work to pack your lunch everyday?
Let’s be honest….packing lunch everyday for you or your kids or your better half (in our case it is me and my better half!) can be work. During one of my one-hour elliptical climbs during the week, I start planning and noting meals on my phone. Then I buy everything I need and on Sunday I take a few hours to prep it all as much as possible. You just HAVE to plan!! Is it work? Yes. But there is nothing more important to me than what we are fueling are bodies with. Do we splurge and endulge? Of course! But during the week, good healthy food is what I want our bodies and brains fueled with.
Not feeling motivated to pack your lunch? Prioritize your health. Prioritize your budget! Find a way to make it fun! Every time I sit down at work and open up my healthy lunch…I feel proud of myself! Yea, it was work! But the reward is feeling good and having more energy and productivity, and knowing that I am contributing to the health and wellness of my family is the biggest driver of all for me! There are ways to make meal planning/lunch packing fun! Have a mimosa while your prep on the weekends and put on a good podcast, football game, or movie! You will thank yourself during the week when you open up that lunch box!

Make-Ahead Salads that stay fresh for days!
The trick is…. chopping all my veggies for my salad on my meal prep Sunday! On Sundays, I put a lot of work (and heart and soul) to make healthy, whole-food breakfast, lunches, and dinner a reality. Washing and chopping all my veggies on Sunday allows me to add them to salads and wraps throughout the week! Don’t have time to prep? Consider buying a ready made salad from Sam’s Club or Costco and dividing it into containers!
I chop bell pepper, carrots, and cucumber and store them in a zip-lock with a paper towel. I have tried a lot of methods, a lot of expensive ‘produce’ containers, and have found this to be the very best method!!
