What makes this Healthy Italian Chicken Soup immunity boosting?

Every part of this soup has a different health benefits. Bone Broth is one of them. Think of bone broth as a SUPERFOOD! Bone Broth is not the same as regular broth or regular stock. Regular broth or stock are simmered for a shorter period of time than bone broth. The reduced cooking process reduces the amount of beneficial gelatin extracted from the bones. Regular broths and stocks are limited in their ability to support the immune and digestive systems. There are so many benefits to Bone Broth! I will go over just a few with you!

Healthy Italian Chicken Soup with pasta in it !

What will you need to make this Healthy Italian Chicken Soup?

  • 1.5-2 LBS OF Shredded Chicken Breast (use my recipe for EASY INSTANT POT SHREDDED CHICKEN)
  • 8-9 cups of Bone broth (or more depending on broth consistency you want)
  • Celtic Sea Salt and 16 Mesh Black Pepper to taste
  • 28 OZ can of diced tomatoes (not drained)
  • 2 Tablespoons Ghee – divided
  • 1 tablespoon Italian Seasoning
  • 1 medium sweet onion, peeled and diced
  • 4 stalks of celery, peeled and chopped into 1/2 inch pieces
  • 4 medium to large carrots chopped into 1/2 inch pieces
  • 1 cup fresh chopped spinach
  • 6 garlic cloves minced (or to taste! we like a LOT of garlic)
  • 1 cup fresh shredded parmesan cheese, and more for garnish
  • 1.5 tablespoon Monk Fruit Sugar Replacement (**SECRET INGREDIENT**)
  • ****If desired cook pasta or rice that you can store on the side and add to the soup!
Italian Chicken Soup no pasta!

How to make Healthy Italian Chicken Soup

  1. Add 1 tablespoon ghee to a large dutch oven on medium heat. Add celery, onion, and carrots. Saute for 3-5 minutes until slightly softened. Do not saute too soft. You want them to be slightly cooked, but not too soft, so they hold up in the soup!
  2. Add 1 Tablespoon of Italian seasoning to carrot, onion, celery mix and cook another minute.
  3. Add garlic and cook 1-2 minutes. Do NOT burn garlic!
  4. Add 8 cups of bone broth bring to a simmer along with the can of diced tomatoes with the juices.
  5. Add shredded chicken to soup (if you used the instant pot to make the chicken, add the remaining juices from the instant pot…this will add great flavor to your soup!)and bring to a boil for 30 seconds, then bring back down to a low simmer.
  6. Add additional tablespoon of ghee, 1.5 tablespoon of monk fruit sweetener, and 1 cup of fresh grated parmesan cheese.
  7. Allow soup to simmer an additional 15 minutes.
  8. Add salt and pepper to taste.
  9. Add fresh chopped spinach and stir.
  10. Add more bone broth if need to get desired consistency.
  11. If desired add rice or pasta to the soup. Store rice or pasta and add to soup as it is served, so that the pasta or rice does not get soggy!
  12. Enjoy!

Ingredients
