Healthy Harvest Chicken Salad

Chicken salad will always be one of my favorite meals to prep for the week. It is so easy and packed with both healthy protein and hearty vegetables. This Healthy Harvest Chicken salad is my current favorite flavor combination and filled with all lot’s of fun Autumn fruits and veggies. I often feel like so many of the recipes you see in the fall and winter are heavy and make me tired after I eat them! That’s fine once in a while, but sometimes I just need something light, but still seasonal!

What You Will Need to Make this Healthy Harvest Chicken Salad:
- 2 cooked chicken breast chopped or shredded or 2-2.5 cups of rotisserie chicken shredded (here is the link for my easy instant pot shredded chicken !! )
- 1 cup diced organic celery
- 1 cup diced organic sweet onion
- 1 cup halved organic purple seedless grapes
- 1 cup diced organic granny smith apples
- 1 tablespoon white vinegar
- Celtic Sea Salt to taste (read why this is the only salt you should use)
- 16 mesh pepper to taste (What’s mesh pepper?)
- 1/2 cup Avocado Oil May or more to taste (the very best tasting on here)
- 1/2 tsp celery seed
How to make this Harvest Chicken Salad:
- Dice or Shred the cooked chicken breast or rotisserie chicken.
- Combine all the ingredients in a medium size bowl and mix together.
- Serve on crackers, croissants, in a wrap, or on bread!
**Healthy and delicious!! For those of you who would rather lighten this up even more, you could swap out the mayo for some tangy Greek yogurt if you’d like. I’ve personally never tried it, but I do think it would still have great flavor!
**As for how you serve your chicken salad, that’s up to you! I usually go for the classic sandwich and often time use these sandwich thins or these wraps. For a lighter version, you could add some to a little cup of lettuce.
