HEALTHY GROUND BEEF ENCHILADAS

Bringing you the very best Healthy Ground Beef Chicken Enchiladas! This delicious dish is made with seasoned ground beef, caramelized onions and a light fluff of shredded cheese! These make fantastic leftovers and would also work great for a weekly lunch or dinner meal prep! The taco season is a recipe from scratch…don’t skip this part, you won’t be sorry!




What I used to Make these Healthy Ground Beef Enchiladas
1 LB Grass Fed Ground Beef
Taco Seasoning – Use my recipe made from scratch !
1/4 cup diced bell pepper
1/4 cup diced onion
1 TBSP minced garlic
8 Flour Tortillas
Mexican Shredded Cheese (Approximately 1 1/2 cups)
1 15 oz Jar Red Enchilada Sauce – The BEST ONE !!!
Caramelized Onions
Cilantro – For Garnish
Optional Toppings Include Sour Cream, Pico, Salsa or Hot Sauce


How to make these Ground Beef Enchiladas
- Using a large onion, make a batch of caramelized onion. Here is a great recipe!
- Preheat oven to 350 degrees
- Heat a large skillet over medium-high heat. Add a TBSP of avocado oil. Saute 1/4 diced onion and 1/4 cup diced bell pepper. When soft and translucent add garlic and cook for another 1-2 minutes. Then add ground beef until cooked through. Drain grease and then add taco season with 1/4 cup water. Saute until taco seasoning is absorbed.
- Pour about 1/2 cup of enchilada sauce into the 9 x 13 baking dish to cover the bottom.
- Lay tortilla on a flat surface and spoon ground beef mixture down the middle, top with desired amount of cheese ( I prefer light cheese, but you do you!). Then, add desired amount of caramelized onions to enchilada.
- Roll up tortilla and place, seam side down, in the baking dish.
- Repeat with remaining tortillas.
- Top enchiladas with remaining enchilada sauce and cheese.
- Bake for 15-20 minutes or until heat through and cheese has melted.



Healthy Ground Beef Enchilada
Ingredients

- 1 Packet Taco Season or Recipe From Scratch
- 1/4 cup diced yellow onion
- 1 TBSP fresh minced garlic
- 1 TBSP avocado oil
- 8 flour tortillas
- 2 cups Mexican Shredded Cheese (or to taste…i prefer light cheese)
- 15 oz jar or can red enchilada sauce
- 1 batch caramelized onion from one batch
- optional toppings include Cilantro, Sour Cream, Pico De Gallo, Avocado Sauce
