Grain Free Chicken Enchiladas

These gluten-free grain free chicken enchiladas are absolutely fantastic!! If you like leftovers, you will be thrilled with this dish! The leftover enchiladas are as delectable as the dinner hot out of the oven! I even had some bites of them cold, and they were heavenly.

This dish is good for 2 people with some leftovers, or for 4 people for dinner with no leftovers. Not only are these enchiladas delicious, but the recipe I am giving you, uses best-in-class, good for your body, energy boosting ingredients.

What you will need to make the Grain Free Enchiladas

**2 1/2 lbs of Organic Chicken Breast**

**1 packs of Siete Almond Flour Tortillas**

**1 jar Siete Green Enchilada Sauce**

**1 can of Organic Black Beans- rinsed!**

**1 pack Organic Shredded Mexican Cheese**

**1 10 oz can of Organic Diced Tomatoes**

**1 4 oz can of Diced Green Chili’s (hot or mild)**

**1x batch taco seasoning from scratch, I will post my link to my recipe below**

**1 lime**

**1 jar taco sauce-for topping**

**1 container sour cream- for topping**

**2-4 chopped Jalapeno for garnish**

Taco Season Ingredients:

**1 tablespoon chili powder**

**¼ teaspoon garlic powder**

**¼ teaspoon onion powder**

**¼ teaspoon crushed red pepper flakes**

**¼ teaspoon dried oregano**

**½ teaspoon paprika**

**1 ½ teaspoons ground cumin**

**1 teaspoon sea salt**

**1 teaspoon black pepper**

NOTE:

If you bake one dish of 9×13 dish of Enchiladas, you will have leftover chicken. Freeze chicken for use for next time, or use for tacos, fajitas, or quesadillas. This recipe will serve around 4 people with 1 – 9×13 dish batch. To serve 6-8 people, get 2 packs of tortillas and an extra pack of cheese.

How to make the Grain Free Enchiladas

1. Place the diced tomatoes and green chiles in the slow cooker. Place the chicken breasts on top and season them with taco seasoning.

2. Cover and cook on high for 3 hours or low for 6-7 hours. Cook times will vary based on slow cooker.

3. If chicken starts to dry out, add chicken bone broth as needed. Depending on how your slow cooker cooks, you may not need to do this. I didn’t need to do it when I cooked this, however some slow cookers cook faster than others.

4. Add in some freshly squeezed lime juice, mix everything together and taste. Season with salt to taste.

5. Pre-heat oven to 350 degrees. While the oven is pre-heating, assemble enchiladas.

6. To assemble the enchiladas, set up an assembly line including: tortillas, enchilada sauce, chicken mixture, and cheese and black beans..Cover bottom of 9 x 13 baking dish with 4 tablespoons of Siete Green Enchiladas Sauce.

7. Lay out a tortilla.  Add a generous spoonful of the chicken mixture in a line down the center of the tortilla, then sprinkle with 1/3 cup cheese and black beans. Roll up tortilla and place in a greased 9 x 13 baking dish.

8. Assemble the remaining enchiladas.  Then spread any remaining sauce evenly over the top of the enchiladas, followed by any extra cheese.

9. Bake uncovered for 20 minutes, until the enchiladas are cooked through and the tortillas are slightly crispy on the outside. For super crispy enchiladas cook 25-30 minutes.

10. Remove pan from the oven and serve the enchiladas while they’re nice and warm, garnished with lots of toppings.

Ingredients
  

  • 2.5 lbs organic chicken breast
  • 1 pack Siete almond Flour Tortilla
  • 1 10 oz can organic diced tomatoes

  • 1 organic lime
  • 1 jar taco sauce or salsa for topping
  • 1 container sour cream for topping
  • 2-4 fresh organic jalapeno for topping

Taco season recipe:

  • 1 tbsp chili powder
