Easy To Make Healthy Ramen Noodle Salad

This Healthy Ramen Noodle Salad is a lightened up version of the traditional crowd favorite ! Broccoli Slaw, Ramen Noodles, Sprouted Pumpkin Seeds, Almonds, Avocado Oil and Monkfruit make this dish not only delicious, but healthy too! This salad is full of nutrition and tasty goodness, I guarantee this is one you will make again and again! Sweet, tangy, healthy and delicious!

What you will need to make this Healthy Ramen Noodle Salad!

12 oz pack of broccoli coleslaw mix

1 pack of chicken flavor ramen noodles

1/2 cup of toasted sliced almonds

1/2 cup of pumpkin seeds

1/2 cup Lakanto monkfruit sweetener (sugar alternative)

1/2 cup avocado Oil

1/4 cup plain white vinegar

2 tbsp fresh chopped chives

salt and pepper to taste

Healthy Ramen Noodle Salad is not only healthy and tasty, but it is super simple to make too!

To be clear, this is not a make ahead salad! The leftovers are delicious…but the texture will change a little bit…but still very good!!! I often take this dish to parties ! I usually put it together an hour or so before a party and the taste and crunchy texture of the toasted ramen noodles is delicious! If you do need to make ahead, prep everything, and then add ramen noodles and dressing last minute! If you are making for meal prep, portion little sides of dressing!

My original recipe I’ve used for years for this salad, calls for sugar and canola oil. As much as I love this salad, I was determined to find a way to lighten it up a little bit! Lakanto Monkfruit (sugar replacement) and avocado oil, give this salad a healthy upgrade!

This recipe makes enough for about 6 people to have as a side dish! If taking it to a BBQ or a party, I would for sure double the recipe! The recipe doubles and triples beautifully !

How to make Healthy Ramen Noodle Salad

  1. To make the dressing: Combine the avocado oil, vinegar, monkfruit sweetener, and the season packet from the chicken flavor Ramen Noodle packet. Stir until monkfruit is dissolved. The dressing will be a little thick, but that is the right consistency. After the dressing is made, set aside.
  2. Pour the broccoli slaw into a bowl and chop into small pieces with kitchen scissors.
  3. Put the uncooked ramen noodles into a zip lock and use something heavy to ‘crush’ or break down the noodles into small pieces. Heat a non-stick skillet on the stove and gently toast the un-cooked ramen noodles. Make sure not to burn. If you burn, it was alter the taste of the dish. Best to toast low and slow. Add toasted noodles to broccoli slaw mix.
  4. In the same skillet, toast the almonds and then add to the broccoli slaw mixture.
  5. Use tongs to mix the broccoli slaw, noodles, and almonds.
  6. Add the dressing and mix.
  7. Add in the chopped chives and mixed.
  8. Enjoy!
