This ‘Easy Summer Salad For One’ is so quick and easy to put together! Salad, Salad, and more Salad!!! Summer is here, and I think we can all agree, having a few simple salad recipes in the rotation, makes summer eating tasty, light, and delicious! Not cooking for one? No problem…just multiply the recipe based on how many people you have! And honestly….for a fresh Summer Salad…you can measure those ingredients with your heart! Add a protein to this to serve as the main dish. Take to a BBQ or Potluck and I promise you will get 5 star reviews!

What You Will Need To Make This Salad:

** 2.5 oz of salad mix such as Spring Mix or a Baby Lettuce **

** 1 small Mandarin Orange **

** 1/4 of a Hot House Cucumber Peeled and Sliced **

** 2 oz of Glazed or Honey Roasted Pecans **

** 6 cherry Tomatoes sliced **

** Store-Bought Poppy Seed Dressing – THE ONLY ONE I USE! **

  • 2.5 oz of salad mix- such as spring mix or baby lettuce
  • 1 small Mandarin Orange
  • 1/4 Hot House Cucumber Peeled and Sliced
  • 2 oz Glazed or Honey Roasted Pecans
  • 6 cherry tomatoes – sliced in half
  • 2 oz store bought Poppy Seed Dressing


  • Put all ingredients other than dressing in bowl and toss together!
  • Lightly glazed salad dressing over top of salad and enjoy!
