Easy Pickled Onion

I absolutely love pickled onion! I will put it on anything, including tacos, burgers, sandwiches, eggs, burritos, salads and more! This is a very simple recipe that anybody can make! Onions will be ready in under an hour and just get better and better as they soak up all that tangy vinegar! These onions will give all your meals a burst of tang and flavor!
What you will need to make these Easy Pickled Onion
1 Organic Red Onion
1/4 cup Red Wine Vinegar
1/4 cup White distilled Vinegar
2 teaspoons sugar
generous pinch of salt
Add easy pickled onion to a variety of dishes
Pickled onions are one of my favorite ingredients to add to a recipe! They turn any dish into a work of art. There is just something about the vibrant pink of a pickled onion that brings life to even the dullest looking dish! They are sweet, sour, tangy and crunchy!
For a long time I was afraid to try to make my own pickled onions. I make all kinds of recipes, so you would think I would jump on something as easy as pickled onions! I think it was hard, because there are so many different recipes out there. With something as easy as pickled onions, I find basic is better! This recipe is so easy and I promise you will make these again and again!

Easy Pickled Onion
Equipment
- small sauce pan for stove
Ingredients
- 1/4 cup Red Wine Vinegar
- 1/4 cup White Distilled Vinegar
- 1 Organic Onion peeled and thinly sliced (1/8 " slices)
- 2 tsp sugar
- 1 generous pinch of salt
Instructions
- Peel and slice organic red onion. Thinner slices will absorb vinegar more quickly.
- Add both vinegars, sugar and salt into small saucepan on stove and bring to a simmer. Continute to simmer until sugar and salt is dissolved.
- Remove from stove and let cool
- Add liquid and onions to a bowl or jar and cover.
- Place onions in fridge and store up to 2 weeks in fridge.
- Onions will be ready in about an hour but taste and texture will improve over time as onions absorb all the liquid.
You can add these pickled onions to anything. Salads, sandwiches, wraps, tacos and burgers! Most recently I topped them on my grain-free tacos!!! I paired them with my homemade pico and OH SO GOOD!!!
