Easy Instant Pot Shredded Chicken
This recipe shares how to make tender shredded chicken in the instant pot, that is tasty, juicy, and most of all not overcooked or mushy! It freezes wonderfully so is a great option for weekly meal prep! A healthy addition to soups, wraps, salads, and sandwiches throughout the week!

A lot of people think of getting a rotisserie chicken when in need of shredded chicken. Rotisserie chicken is a fast easy fix that provides a multitude of options for dinner..but there are healthier options! I try to avoid rotisserie chicken when possible.
When busy nights happen, rotisserie chicken seems like an easy fix to make a quick dinner like chicken tacos or chicken quesadillas. I promise you however, that it is just as fast to throw some chicken in the instant pot…..as it is to park, pile into Costco and walk alllll the way to the back of the store to get that chicken!!
It can be hard to find an organic rotisserie chicken, and we prefer organic, pasture-raised chicken when possible. A lot of rotisserie chickens have preservatives, a lot of salt, and other ingredients that we try to avoid. Also, cooking the chicken at home assures that it is fresh and properly cooked through.
Have we done rotisserie chickens…? Sure! But if I have the option, easy instant pot shredded chicken is what i’ll choose! This easy method shredded chicken makes it very easy to do chicken in a rush on a work night, as well as planning ahead for meal prep!!
What do you need to make instant pot shredded chicken?
1.5 lbs-2.5 lbs of organic boneless chicken breast
1/2 teaspoon of Celtic Sea Salt to taste. If you don’t know about Celtic Sea Salt and read why this salt is SO amazing!
1/2 teaspoon pepper to taste (I use the most amazing 16 mesh pepper…see my link below. You will never want to go back to regular pepper after using this!)
1 tablespoon garlic powder.
Additional seasonings to taste! I will list one of my favorites below that I like to use!! However if you want a neutral shredded chicken recipe that can go with any dish, follow the recipe below!
Easy Instant Pot Shredded Chicken
- 1.5-2.5 lbs thawed organic chicken breast pasture-raised if you can find
- 1/2 tsp Celtic fine-ground sea salt
- 1/2 tsp 16 mesh pepper regular pepper is fine if you don't have 16 mesh
- 1 tbsp garlic powder
- 1 cup chicken bone broth
- Season both sides of chicken liberally with the salt, pepper, and garlic powder!
- Add the chicken breasts chicken bone broth to instant pot. Then briefly toss to combine, being sure to arrange the chicken breasts in an even layer on trivet in instant pot.
- Cover with the lid and pressure cook on high for 10 minutes, followed by a 5 minute natural release, followed by a quick release with whatever pressure remains. Be careful, it will be hot when you remove lid.
- Remove the lid and transfer chicken to bowl. Use two forks to shred the chicken. Give it a thorough toss with the remaining juices in the Instant Pot if desired.
- Store chicken in fridge for up to 3 days or freeze for up to 3 months.
A few helpful tips when making the easy instant pot shredded chicken!
Use a trivet in the pressure cooker to ensure that all sides of the chicken cook evenly!
Use chicken bone broth instead of regular chicken broth. It will add maximum flavor and a ton of health benefits including strengthening the immune system, improved joint health, increased levels of collagen, and soothes the gut.
