This Easy Healthy Egg Salad is one of my favorite go-to meals for breakfast and lunch. I will eat in on toast, cloud bread, treat it as a dip with crackers or vegetables. Other ways to enjoy this include putting it in a wrap, lettuce cups, or on its own with a fork! This is one of the easiest meals that you can meal prep for lunch for the week! My Easy Healthy Egg Salad. I use heart-healthy avocado oil mayo to make this egg salad!

Egg Salad Makes For A Great Meal Prep !

My Easy Healthy Egg Salad makes a great item to meal prep for lunches for the week! Whether you are at home, or pack your lunch, this Egg Salad when meal prepped, doesn’t get boring because you can change it up daily! One day have it with crackers and the next day serve it on toast! Also when I need a quick snack before dinner, sometimes I will take a bite or two of my egg salad for a quick protein boost!

This Easy Healthy Egg Salad is tangy and delicious. This Egg salad can be thrown together in under 15 minutes! So if you are in a pinch for meal prep for the week, save this recipe- it is a great go-to! If you use my FAMOUS HACK FOR HARD BOILED EGGS – you can have these eggs popping out of there shell, in no time at all!

What you will need to make this Easy Healthy Egg Salad

6 hard boiled eggs- MY FAMOUS EASY WAY TO MAKE THESE EGGS!

I/4 cup celery – chopped super fine

1/4 cup sweet onion- chopped super fine

1/4 cup avocado oil mayo

1 TBSP yellow mustard – this mustard has hidden veggies in it- its amazing!

1 tsp white vinegar

1 tsp celery seed

1/4 tsp salt

1/4 tsp pepper

Chopped Pickles for garnish (optional)

How to make this Easy Healthy Egg Salad

  1. Finely chop the hard boiled egg. I use kitchen scissors sometimes to get a super fine consistency.
  2. Add onion and celery to the chopped egg and stir until mixed well.
  3. Add the mayo, mustard, and vinegar and stir together until mixed well.
  4. Add in the celery seed, and mix.
  5. Add in the salt and pepper (to taste if desired)
  6. Serve on toast or crackers and garnish with chopped pickles if desired!

Ingredients
  

  • 6 Hard Boiled Eggs
  • 1/4 cup celery – chopped super fine
  • 1/4 cup sweet onion – chopped super fine
  • 1/4 cup avocado oil may
  • 1 TBSP yellow mustard
  • 1 tsp white vinegar
  • 1 tsp celery seed
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • chopped pickles for garnish (optional)

Instructions
