cauliflower soup ingredients

Easy and Delicious Cauliflower soup is not only delicious, but it is easy to make!

This soup is made using only butter and no heavy cream. That was the main objective for me when making this soup. I see so many ‘Cream of……(fill in the vegetable here)’ and just continue to scroll, because I don’t want a soup that is filled with heavy cream. I feel like it takes away from the fresh taste of the vegetables! The lighter the soup the better! This soup blends the vegetables to add thickness and texture to the soup. The result is a tasty soup that really allows the flavor of the cauliflower to burst through!

Try this soup! Once you make it one time, I promise you, that you will want to make it again and again. This is a great soup to make ahead, put in a crockpot, and serve in little bowls at a dinner party or in shot glasses as an appetizer! I also make this soup for weekly meal prep! I don’t always have access to a microwave, but when I do, this is a go-to for lunch!

How to make Easy and Delicious Cauliflower Soup

  1. Melt the butter in a large dutch oven over medium heat. Add the onions and garlic and cook, stirring frequently, until soft and translucent, about 8 minutes. Do not brown. If you brown, the taste of the soup will be altered. You don’t want a burn butter/onion tasting soup!
  2. Cut the cauliflower leaves off and chop cauliflower into florets.
  3. Add the chopped cauliflower to the pot , along with the chicken broth, 1 1/4 teaspoon salt and 1/4 teaspoon pepper. Bring to a boil, then cover and turn the heat. Simmer for about 30 minutes.
  4. After the soup has simmered and cauliflower is tender, purée the soup with an immersion blender or standard blender until completely smooth. If you used a standard blender like I did, do it in 2 batches. After blended, bring the soup back to a simmer and stir in the lemon juice and Parmesan. If soup is not desired consistency, add the reserve 2 cups of chicken broth until it is desired texture.
  5. If you get the sense that your soup needs more ‘salt’ add more cheese or lemon juice. You can also add additional salt and mesh pepper to taste. To thicken the soup, allow it to simmer, uncovered until it reduces to desired consistency.
  6. Ladle the soup into bowls ! Garnish with cheese, lemon, herbs or crackers!
  7. If freezing soup, leave lemon juice and parmesan cheese out. Add to soup when defrosted.
