Chickpea Salad Sandwich

This chickpea salad sandwich recipe is a filling and easy vegetarian lunch idea made with chickpeas and bread and butter pickles! It is veggie heavy but light and tasty! It only takes minutes to make this Bread & Butter Pickle Chickpea Salad Sandwich! Similar to tuna salad or chicken salad, but made totally vegan with simple classic ingredients including chickpeas, bread & butter pickles, celery and onion.

What you will need to make this Chickpea Salad Sandwich:

1 can chickpeas (drained and rinsed)

1/4 cup chopped celery

1/4 cup chopped onion

1/2 cupped chopped bread & butter pickles (you MUST use these!)

1 TBSP pickle juice

2 TBSP sweet relish

1/4 tsp sea salt

1/4 tsp garlic powder

1/2 tsp dried dill

fresh ground pepper to taste

1 tsp honey

1/4 cup avocado oil mayo (the only brand I use)

How to make this Chickpea Salad Sandwich:

1. Drain the chickpeas and place in a large bowl. Mash well. You can use either a potato masher or the bottom of a mason jar to smash them.

2. Dice up the celery, onion and bread and butter pickles and add them to the chickpeas and mix.

3. Add the pickle juice from bread & butter pickle jar and relish to the chickpea mix and mix together.

4. Add garlic powder, dill, salt and pepper to chickpea mix and stir up thoroughly.

5. Stir in honey, mix well.

6. Serve on toast, in a tortilla, or scoop with your favorite cracker.

7. Store leftover Chickpea Salad in an airtight container in the fridge.

  • 2 TBSP sweet relish
  • 1/4 tsp seal salt
  • 1/4 tsp garlic powder
  • 1/2 tsp dried dill
  • fresh ground pepper to tast
  • 1 tsp honey
  • 1/4 cup avocado oil mayo

Instructions

Call it a chickpea tuna salad but totally but not tuna, made with a few flavorful but simple ingredients! This makes for a great easy weekend lunch, but also makes a great meal prep for lunches for during the week!

 The key health bomb here is CHICKPEAS! You may already have guessed this, but chickpeas are a pretty crucial component of this sandwich when it comes to making it a super healthy sandwich. These legumes are high in protein, full of nutrients, and are a great source of fiber. Chickpeas are also known as garbanzo beans, so you may see them labelled that way at the grocery store, but they’re the same thing, I can tell you after much research!
