Caribbean Chicken Lavash Pizza

These Caribbean Jerk Chicken Lavash pizzas are topped with jerk chicken, sweet summer tomatoes, tangy pineapple, and spicy jalapeño and can be baked or air-fried, for a quick and healthy ‘Mini Lavash Flatbread Pizza’. I used Atoria’s Family Bakery Mini Lavash Flatbreads. I used my Cosori Air-Fryer to whip this pizza up in under 10 minutes! Spread the cheese over the pizza crust. Top pizza with cooked chicken tossed in store-bought Caribbean Jerk sauce and pineapple pico. You can buy store bought pineapple pico or make your own! The recipe for my super easy to make pineapple pico is below!
Why you need to make this Caribbean Jerk Chicken Mini Lavash Pizza
If you like thin crust pizza, you’ll love these super easy Caribbean Jerk Chicken Mini Flatbread Pizzas! Even your kids love them and they take only minutes to prepare. I used the air fryer to make these which consisted of a 6 minute total cook time! I used leftover grilled chicken I had from a cookout! I always have a batch of my Pineapple Pico De Gallo around! Use my PICO RECIPE and just add pineapple to it! If you don’t like pineapple, you can just use the Pico De Gallo as is!
Lavash is a Middle Eastern flatbread, usually found in the deli section of your supermarket. Pronounced Lah-vahsh, is a thin and soft unleavened flatbread. Its rectangular in shape, and can vary in thicknes. I found the Atoria’s Family Bakery available at Fresh Thyme, Sprouts, and or you can order from here! Atoria’s Family Bakery is by far the best Lavash I’ve had!

You can either cut the Lavash into 4 squares before you add the sauce which will give you crispy edges all around, or you can make one large pizza and cut it after. For this recipe I baked it in the air fryer first and then cut it! It is really whatever you prefer! This is a great light meal or snack that can be made with minimum effort, especially if you have the store-bought ingredients around!

What I used to make this Caribbean Jerk Chicken Mini Lavash Flatbread Pizza
- Atoria’s Bakery Mini Lavash Flatbreads Traditional Flavor ( Order Here!)
- 3/4 cup shredded mozzarella cheese
- 1/2 cup prepared chicken diced or shredded (use my instant pot easy shredded chicken recipe!) You can use leftover rotisserie chicken, leftover grilled chicken, store-bought grilled chicken strips, etc..
- 1/2 cup Pineapple Pico De Gallo (use my Pico De Gallo recipe and add pineapple). You can use my recipe or by store-bought Pineapple Pico De Gallo!
- 1/4 cup prepared store-bought Caribbean Jerk Sauce. I used this one that is sugar free and is only 10 calories per serving and sugar-free!!!
- Avocado Oil Cooking Spray. This is the only one I use because I know it is properly sourced!

How to make the Caribbean Jerk Chicken Mini Lavash Pizza
Air Fryer Version:
- Pre-heat air fryer to 350
- While air-fryer is heating up, mix sauce and chicken together in a small bowl.
- After air-fryer is heated spray basket with a short spray of avocado oil spray. Give a quick spray to both sides of the Lavash
- Cook the Lavash for 2 minutes at 350 to let it crisp up a little. For crispier Lavash, cut into 4 squares before placing in air-fryer to allow more of the edges to be crispy.
- Remove air fryer basket and add cheese to flatbread (reserving 2 pinches to top on pizza after adding all other ingredients), then add sauced chicken, then add the pineapple pico de gallo, then add the remaining 2 pinches of cheese.
- Cook an additional 4 minutes.
- Enjoy!
Oven-Baked Version:
- Pre-Heat Oven to 400
- Spray both sides of Lavash with quick spray of avocado oil cooking spray.
- Bake the Lavash for 2 minutes before adding toppings to help it crisp up. For crispier Lavash, cut into 4 squares before placing in oven to allow more of the edges to be crispy.
- Remove Lavash after 2 minutes and add cheese to flatbread (reserving 2 pinches to top on pizza after adding all other ingredients), then add sauced chicken, then add the pineapple pico de gallo, then add the remaining 2 pinches of cheese.
- Cook an additional 6 minutes.
- Enjoy.
