Buffalo Chicken Salad

If you want a delicious idea for you weekly lunch meal prep, then you have to try this Buffalo Chicken Salad that is full of clean, healthy, good for you ingredients. This is quick and easy to make. You can make this Buffalo Chicken Salad using my shredded chicken recipe, or if you are in a pinch, you can buy pre-cooked or rotisserie chicken from the grocery store.

What you will need to make this Buffalo Chicken Salad

**1 lb cooked chicken breast shredded or chopped…approximately 2 cooked chicken breast (or 1 lb pulled rotisserie chicken)**

*buffalo wing sauce**

**mayo (I used avocado oil mayo)**

**1 cup chopped celery**

**1 cup chopped sweet onion**

**1/2 tsp celery seed**

**1 tsp garlic powder**

**salt and pepper to taste**

Why I love the Buffalo Chicken Salad Meal Prep for Lunch!

I am always on the go! As a lot of you know, I spent many years as a caretaker for my mom. I was also working full time and trying to keep somewhat of a life of my own going! After a long battle with dementia, my mom passed away in the Fall of 2020. It has been a rough few months, but my blog and my love of cooking has really helped keep me distracted and motivated. Cooking is something that is second nature to me, so for the past few months, it was an easy way to feel a bit of normal and kind of just go into auto-pilot!

I am not as busy as I used to be, but still always seems like my time is filled! One thing I find with always being on the go, is that cold lunch options are the way to go. I pack my lunch early in the morning in my lunch box, and often times don’t eat it until hours later. I often eat lunch in my car between the gym and work, so microwave is just not an option! If you like me, and in need of cold meal prep, this Buffalo Chicken Salad lunch meal prep is just what you need!

Buffalo Chicken Salad

This recipe is delicious! I am a fan of all things that have buffalo sauce involved! What’s great about this recipe is that it is low calorie, full of protein, and can be enjoyed in a variety of ways! Put it on a bed of greens, in a tortilla, on sandwich thins or an English Muffin! You can even make this into a buffalo chicken quesadilla if you want to get creative. I go heavy on the veggies in this recipe, to give it that extra crunch!

Ingredients
  

  • 1 lb organic cooked chicken breast shredded or diced (can used cooked rotisserie chicken as well) use instant pot cooked chicken recipe @ www.abusykitchen.com
  • 1 cup organic chopped celery
  • 1 cup organic chopped sweet onion
  • 1/2 cup mild wing sauce I used The New Primal Noble Made Mild Wing Sauce
  • 1/2 cup mayo I used Sir Kensington's Avocado Oil Mayo
  • 1 tsp garlic powder
  • 1/2 tsp celery seed

Instructions
 

  • in a bowl, shred or chop the cooked chicken.
  • add the chopped celery and chopped onion to the chicken.
  • in a separate bowl mix together the mayo and wing sauce.
  • add the mayo/wing sauce mixture to shredded chicken and stir until full mixed.
  • add garlic powder and celery seed and stir until mixed.
  • add salt and pepper to taste
  • chill in the fridge and store for up to 5 days
